Coffee farmers in rural areas often face structural challenges, including the absence of farmer associations, limited access to government assistance or CSR funding, and low bargaining power in the market. Such conditions are evident in Suco Village, Mumbulsari District, Jember, where coffee is typically sold directly to local collectors at a low price of IDR 12,000–18,000 per kilogram. This community service program was designed to empower rural coffee farmers by establishing a coffee farmers’ cooperative and introducing value- added practices through green bean processing. The program was implemented through a combination of socialization, participatory guidance in cooperative formation, training on coffee market opportunities, and the provision of a small-scale coffee hulling machine as a pilot project. The results indicate that farmers gained awareness of the importance of collective organization for accessing external resources, while also recognizing the potential for improved income through basic post-harvest processing. The introduction of the hulling machine increased farmers’ technical capacity and encouraged initial steps toward product differentiation. In conclusion, cooperative development combined with green bean processing provides a practical strategy to enhance market competitiveness and strengthen the bargaining position of rural coffee farmers.
